I am a huge fan of Corrigan's, as many of you know. Dickie's Bar is an excellent spot for after work drinks and the food at Corrigan's is absolutely divine. Be sure to ask for the 'Professional Stalker' cocktail - a whisky and cognac lover's dream blended with figs, allspice and bitters.
Richard is the chef patron of Corrigan Restaurants, which operates Bentley’s Oyster Bar & Grill, Corrigan’s Mayfair in London and Bentley’s Sea Grill in Harrods, London. Richard’s culinary career, in brief, spans several years in the Netherlands, head chef of Mulligan’s in Mayfair and gaining his first Michelin Star as head chef of Fulham Road in Fulham in 1994 and his second star at Lindsay House in Soho, in 1997. Most recently, in 2013, Richard bought a 100-acre private estate, the Virginia Park Lodge in Ireland.
Virginia Park Lodge was built around the idea of self sufficiency, still a very current concept today. The walled garden with the assistance of polytunnels will produce enough food to maintain the house and also supply Corrigan's London restaurants with produce such as vegetables, soft fruits, herbs and spices!

20th November 6 course truffle tasting menu
The truffle season is upon us and Corrigan’s Mayfair is the place to celebrate it, an evening dedicated to one of the world's most luxurious and rare culinary ingredients. Chef-Patron Ross Bryans has created a six course truffle tasting menu, using both black and white truffles. Taking place on the 20th of November, the evening will showcase the very best of the season’s truffles paired with wines selected by head sommelier, Jolanta Dinnadge. The intimate dinner will be set in the Lindsay Room, an elegant dining room at Corrigan’s Mayfair. Supplying the sought after ingredient is world renowned Wiltshire Truffles, a specialist family run business dedicated to hunting English truffles from a secret location in the deepest countryside, as well as the best from around the world. With a true understanding and passion for the gourmet ingredient, Ross Bryans has come up with a menu guided by the season, choosing ingredients that perfectly complement the truffles.

2nd December Corrigan’s Christmas Classics
Corrigan’s hosts regular cookery classes where you will be invited behind the scenes in our Mayfair kitchen and given instructions and guided through this culinary journey. Your cookery school experience starts with breakfast bites and tea/coffee. You will be introduced to a number of dishes with the end result culminating in your four course lunch with wines paired to each course by our sommelier. To wrap up your perfect day you will receive a goody bag containing recipe cards, an apron and a loaf of our famous soda bread; to remind you of your time and to inspire you to flex your cooking muscle a little further. The day starts at 9.30am, with Champagne and canapés served prior to lunch at 1pm. Refreshments are provided throughout the day.

Dickie’s does make a dashed good cocktail, I must say. Using the best of the season’s harvest from Richard Corrigan’s Irish estate, Virginia Park Lodge and a jigger or two of the finest ambrosias. Every month we offer you a unique insight in to the expertise and secrets of the Dickie’s Bar team and to discover a glimpse in to the hard work and passion that goes on behind the scenes. Each masterclass includes the teaching and making 2 cocktails per person, canapes fresh from the Corrigan’s kitchen and a recipe card for you to take home and practise in your own surroundings. Chin-chin! The class starts at 3pm.
