SPRING BAKING AT HOME: THE GLENAPP CASTLE CARROT CAKE

We recently had the pleasure of spending a night at this award-winning five-star hotel, experiencing truly excellent service and absorbing the outstanding setting - including miles of forestland and seascapes (more on this later). The castle offers stunning views out to sea and to the famous volcanic outcrop of Ailsa Craig. Beyond, you can see the Isle of Arran, Holy Island, and, on a clear day, the stunning hills of Northern Ireland.
The wonderful team at Glenapp Castle have sent us this brilliant recipe for their Glenapp Castle Carrot Cake, so you can make it at home during the lockdown. Enjoy!
Glenapp Castle Carrot Cake
Ingredients:
300g soft light brown sugar
3 freerange eggs
300ml sunflower oil (3 teaspoons)
300g plain flour
1 teaspoon of bicarbonate soda
1 teaspoon of baking powder
1 teaspoon of ground cinnamon
1 teaspoon of ground ginger
300g grated carrots
cream or ice cream to serve
Instructions:
Whisk the eggs and sugar until light then add carrots and all dry ingredients. Mix all the ingredients together and then place a little sunflower oil inside the baking tray. Bake at 150c for 30-40 minutes. Serve with cream or ice cream. Simple!
