NEW: CAOL ILA WHISKY ARRIVES AT THE BAR AT THE DORCHESTER
Dorchester Collection’s iconic British hotel, The Dorchester, has expanded its extensive list of specialist liquors by offering, for the first time, a rare cask of single malt Scotch Whisky, Caol Ila. The whisky has been carefully selected by the hotel’s legendary bar manager and expert alchemist Giuliano Morandin, distilled exclusively for The Dorchester by Caol Ila Distillery in Islay, Scotland.
Originally a 250 litre cask, the maturing process means that some of the liquid is lost leaving 220 litres. Giuliano has been leading the team at The Bar at The Dorchester for over 35 years and is highly regarded amongst leading drink connoisseurs. Throughout his career Giuliano has achieved a number of accolades within the industry and named amongst the world’s best bartenders.
Caol Ila has been distilled, matured and bottled in Scotland by Douglas Laing & Co, the creator and purveyor of the finest Scotch Whiskies since 1948. This exquisite whisky delivers tasting notes of soot and ash with a beachy quality and a peppery tongue, perfectly encapsulating authentic terroir craftsmanship and distinct flavour.
Distilled in September 1996, the exclusive hogshead cask will break down into 312 bottles available only to The Bar at The Dorchester. Whisky experts recommend the addition of water to fully appreciate the complex aromas and flavours of the spirit. The same experts say it's best to use the water that made the whisky or water from the source with the same chemistry to ensure that the true and original character of it is retained. To accompany the Caol Ila Whisky, Giuliano and his team recommend Uisge Source water from the Ardilistry Spring in Islay, just a couple of miles from the Islay distillery where the Caol Isla Whisky is sourced.

Caol Ila Whisky is available at The Bar at The Dorchester via 50ml servings priced at £25 and Uisge Source water is available via 100ml bottles priced at £10. A 70cl bottle of Caol Ila Whisky can be bought for £150.
